Default Vegetarian What's For Dinner?

Tonight I think I'll make a garlic soup and have with some steamed veggies - brussels sprouts, carrots. Just simple healing food as I've been stressed and under the weather a lot lately and need to nourish body and soul.

Today I had some wholegrain pasta with smoked tofu, and lots of dandelion/nut pesto and sautéd tomatoes and some added sauerkraut on the side.

ooh, mm, I want to make dandy pesto soon too. I'm doing the "three leaves for thirty days" spring thing but also, making soup and stews with the leaves as well. I just love them raw, but then again, I love bitters.

It took quite a while for me to get used to dandelions as I'm not such a great fan of bitters. OR was, last summer I started by putting them in my mouth and chewed stubbornly, lol. Now I know which leaves tastes the best and how to prepare them so that they taste even better.

I like them just tossed with olive oil and garlic and cooked until barely wilted. And the flowers in pancakes but then there's all that carb...

tonight, I don't know yet but I have fiddleheads! and will make a birch syrup sauce to go with them. What else, I don't know, maybe lentil soup because really, I never get tired of it.

Last night was spicy bean burgers with sweetcorn and peas. Tonight will be veggie burgers topped with fried eggs in a bun, followed by oatcakes and Marmite sprinkled with black pepper.

Well, next weekend.
I had; steamed nettles and kale, brussels sprouts, tomato, a little sweet potato, with olive oil, sesame seeds, lightly toasted walnuts, chopped organic garlic, and black salt.
I'm stuffed.

Made a HUGE pot of chilli last night, so that's dinner sorted out for the next 4 days. Won't be posting here again until about Thursday!
